A Sweet Treat

Swiss Milk Tablet

900g granulated sugar
200ml fresh milk
75g butter
1 small can condensed milk (200g)
1/2tsp vanilla extract

Put sugar, fresh milk and butter in a large pan over a low heat. Stir until the sugar is completely dissolved.

Bring to the boil and add the condensed milk. Boil carefully, (i.e. stir occasionally to stop it sticking to the pan) until the soft ball stage, 240F (put a teaspoon of mixture in cold water, when you feel it between your finger and thumb it should feel like a soft ball).

When the bubbles subside, remove from the heat and add the vanilla extract.

Beat thoroughly until the mixture begins to sugar on the bottom of the pan.

Pour into an oiled Swiss roll tin 7x11 inches.

When set mark into squares. When cold it should break apart neatly.
