A Tea-time Treat

Ginger Biscuits


Ingredients
200g plain flour
2 tsp ground ginger
1/2 tsp ground cinnamon
100g light brown sugar
50g black treacle
1/2 tsp bicarbonate of soda
75g butter
Pre-heat your oven to 160C / 315F / gas mark 3
Sift the flour, ginger and cinnamon into a large mixing bowl.  Stir in the sugar.
Put the butter and treacle into a saucepan and heat until melted, then add the bicarbonate of soda to the saucepan and stir gently.
Pour the treacle mixture into the flour and spices and mix to a stiff dough. 
Line a baking tray with greaseproof paper. 
Roll dough into small walnut-sized balls, and squash slightly to make individual biscuits.
Bake for  15 minutes, until golden-brown.
Store in an airtight container.
